Our Kitchen Team:
Our executive chef was born in Managua and graduated from culinary school in Targoviste, Romania, where he earned the prestigious Kitchen Professional Certifiicate. His most recent positions were in Romania and Spain where he cooked at Michelin-starred restaurants.
Our chef helps train our local staff to use organic Nicaraguan products with healthy cooking styles in a sophisticated fine-dining presentation and coordinates with our farmhands, who help harvest ingredients from our farm & garden, and the local kitchen staff who strive to serve consistently delicious meals with fresh ingredients.

Here at Casa Iguana, we strive to use our own farm fresh herbs, produce, eggs, pork and chicken from our 30 acre farm and nature reserve and locally sourced fish and beef.

While we do not serve fish every night, we always have a vegetarian option available.
Dietary restrictions: We are happy to accommodate dietary restrictions, advanced notice is greatly appreciated!
Preferences/substitutions: we ask you to expand your horizons and try something new! Little Corn is very remote.
Lobster: Lobster on Little Corn Island is reason enough to come visit. Casa Iguana does not currently serve whole tails or whole lobster in order to support our local business neighbors who do. Ask our staff for a recommendation!
Other Dining Recommendations:
Visiting the rest of the island and trying the local food is a must during your stay. Ask our staff for a recommendation of good places to have lunch or dinner. Keep in mind that Little Corn is VERY remote. Everyone on the island makes an effort to grow things locally and consolidate food deliveries directly from Managua to keep quality high and costs down.
